Yes, you do misunderstand the concept. A player is supposed to double if he has even one "market loser."
In the situation you described, Player A opens with a 5-3 and points and Player B does not double, he has not lost anything by waiting. There is no sequence of his roll and his opponent's roll that makes it a pass on the next turn. According to XG Player B's best roll is a 6-6, and the worst roll for Player A would be 6-1. After that sequence, Player A still has over 32 percent and has a take. So no reason to double.
However, you probably should double, because it is possible that if you opponent plays poorly you could lose your market, and you don't lose anything because your opponent will double if you don't, if he's a good player, even if you roll poorly (and you would probably have a take).
So XG is "technically" correct but unless you are a tremendously skilled player and far better than your opponent, it is still dangerous not to double right away unless it is clear that you have no market losers.
