In computer simulations I've done, I've noticed that the winner of the one-loss side is a better player on average than the winner of the no-loss side.

Maybe natural selection plays a bigger roll in determining the winner of the one-loss side. Stronger players (the ones who last longer on the main side) are given byes to the later rounds of the second-chance side. So it is easier for stronger players to win that side.
