A lot of people enjoy the physical part of playing over the board. That's no different than chess tournaments, poker tournaments, bridge tournaments, checker tournaments and domino tournaments, all of which use physical playing pieces. Every one of these could be played on tablets. You can even bowl on a tablet.

I assume any TD would allow two players to use a laptop if they both preferred that. Making it preferred or mandatory would absolutely reduce tournament attendance.
