XG_Elo=1 / (1 + EXP(XG_PR * 40 - 1.12)) * 2000 + 732
(from XG Web site)
Therefore
PR 3.5=2129 XG-Elo
PR=7.5=1986 XG-Elo
Q1:
Winning Probability in a 7 pt match= 60.69 Vs 39.31
(XG's winning prob. formula is identical to FIBS)
Online version here:

Q2:
At 5A 7A
METable value is 62.64% MWC between equal players.
I think this more or less balances out the weaker player's strength
although I still think he should be winning about 52%
Q3:
The opening roll sets the winner of the roll at about 52% on the average.
(With some rolls like 31 he is set to 55%)
I'd say 2%+ is OK.
Q4:
To make it 50-50 I think it's OK to start at 2-0 but the opening roll should be
given to the stronger player.
