I agree that it makes sense to say explicitly whether the Jacoby Rule is in force.

But I also seem to recall that there was a conscious decision on Xavier's part to use the term "unlimited game" instead of "money game," in order to downplay the gambling aspect of backgammon. The Jacoby Rule, I would argue, is motivated by gambling concerns—sharks want to force the fish to cash and move on to the next game, rather than waste time futilely chasing an undoubled gammon. Viewed from this perspective, you can make the argument that "no Jacoby" should be the default setting for an "unlimited game."

Having said that, I will note that by default, XG checks the "Jacoby" and "Beavers" boxes when you select an unlimited game…
