If you can produce even one SHA-3 collision by any means, it would make headlines. So I don't think that's an issue. The main weakness in what I suggested is that if the things that are supposed be random are not actually random, then something can break. For an extreme example, if someone forgets to append random characters to the dice rolls, then the same 36 values will be sent every time, and it won't take too long to figure out which value is encoding which roll. But as I said, if this happens then the player has only himself to blame for failing to follow the protocol.
I agree that using the time and location of a mouse click has problems. In addition to what Frank said, I can imagine someone writing an app that helps you cheat by having the computer do the mouse clicking for you, in order to produce the dice rolls that you want.
