I would hit both as well, but it's not just because of the gammons. Either pick-and-pass play leaves just as many shots as the double hit, and since we only have 4 checkers off, should lead to D/P after a hit unless we manage to hit back immediately from the bar. So there's really not much downside to hitting twice.
