The software included with the camera will enable you to download and watch the video on a computer, or you can watch directly to a tv. I download to my laptop and then put two windows (Snowie and video) side by side to enter the match into Snowie. Once you get the hang of it you can fairly easily stay up with the match while inputting -- can get tricky in endgame bearoffs at times but you can always pause the video to catch up.
I agree that the hard-drive cameras are the only way to go. Before purchase I would recommend a full test run set-up of the equipment over your board at a camera store. To maximize field of view, remember to rotate the camera on the tripod mount such that the long aspect dimension of the camera frame is aligned with the longer dimension of the board.
