could i have said/insisted that i wasn't comfortable starting a match so late and asked to have played it in the morning (assuming my opponent was agreeable as well)?

In general yes, you could have asked (or even insisted, regardless of what your opponent wanted to do) to play it in the morning. Sometimes you'll have to start earlier than the regularly scheduled rounds but that'd still allow you to get some sleep.
