The probability of taking longer than some given goal is.
Surely the amount by which you exceed the goal is also important.
I agree that variance is not the most important thing, but it does matter. High variance means more player waiting, which is bad. For example, imagine two 1 point matches followed by a 25 point tie-break ("if necessary"). (Or, two coinflips followed by a 27 point tie-break.) I presume the Nordic will play two rounds a day in the main flight, one before and one after dinner. This obviates a lot of the player waiting concerns.
If you really want to lower the variance put significalntly more time on the clocks and have all three be played simultaneously.
Ouch. Many heads would explode.
I want to use a single time pool. My clock runs only when all three of my plungers are up. Alternately, time runs off my clock at a rate proportional to the number of plungers I have up.
