Unless you throw a 65 or white throws a double 4 or 6 the most likely scenario here is that white is forced to break anchor in the next roll or two and you can then choose between playing on for the gammon or cashing.
With a take point under 20% and good racing chances white still has a take here, I would rather double-in if white were closer to a pass. Waiting is less committal and keeps you options open.
