My unproven hypothesis is that the side going for the gammon will have more oppotunities to make choices and hence more opportunities to make mistakes. For example, in a closed out position the party bearing off must decide whether to play safe or aggressive. All the defender has to do is pass his turn. The same will also be true of blitzing positions where the attacker may have difficult choices while the defender just has to roll the dice and move legally.
