That's quite true; the undefeated finals is the biggest match in the "classic" DE format. I think Douglas Zare wrote a column on this at some point.
One thing to notice here is that in the single-match final format, the second chance final is worth just as much as the overall final, and more than the first chance final. You get a similar effect in a normal elimination format -- the semis are worth exactly as much as the finals. This is an argument for a steeper payout schedule, but I think most people are happy with 8/4/2; risk-averseness causes them to value reaching the finals somewhat less than the equity number would suggest.
