Playing GNU at its highest level is valuable because it teaches you to play against and recognize near perfect play. I can't understand why someone would want to experience anything less than the best. But as already noted, human-like play brings a different set of challenges and your game is incomplete if you ignore that.

In my opinion you are fooling yourself if you think you can simulate human play by making a bot play worse. The best way to simulate human play is by playing humans. And that is easy to do, so why not just do it? Play online against humans on a site where you can save your matches. Analyze those matches with GNU. Learn. Repeat.
