Bob - the best idea I've heard yet is the one you came up with for playing without any dice...

... Both players simultaneously put out a hand with 0-5 fingers and you take the total fingers on both hands mod 6 (plus 1). Repeat for second die with second hand.

Of course, it might slow things down a bit. And its hard to leave the hands on the board AND move the checkers.
