I am definitely not an expert on this. In sports, the saying is "keep your eye on the ball". Here, I have to believe it is "keep your eye on the dice". Make sure the dice from the board go back into the cup and the cup remains in plain view the entire time. Obviously anyone with basic magician skills can manage a swap, so be on the lookout for closed fingers on the hand picking up as they may be holding other dice. And obviously, remember what color the original dice were (they're usually the same color as your dice). If the dice are serialized, make a point of looking at the numbers and writing them on your scoresheet and ask your opponent to verify the numbers. That puts them on notice that you'll be paying attention, and it serves as evidence of a swap if the director ever needs to be summoned.
Use of clocks (and a single pair that remains on the board) makes swapping dice much more difficult.
