Something like the Microsoft Surface or Apple's iTable would be the ideal choice (when they're available for a lot less than $10,000). Manual movement of checkers would be easy. Putting them back in the right place after exploring a position would be as simple as the Undo button. The dice would roll in 3D according to a physical model. You could double-tap the dice to pick them up, wiggle your finger on the cup to shake it and then swipe the finger towards the board to cast the dice. There could be a button to "Remember this position". You could start a rollout of a position in the background while the game continues. There could be side pages which manage betting.
