For many, many years we played our chouettes on Fibs and had players from all over the country. You can play a chou on any server once you agree on the wording and rules, as we did then.
Now, I occasionally play chouettes using a webex so everyone can see my computer and we play on Extremegammon or Snowie. It is best to have a conference call-in so that everyone can talk...there are many free conference call services. Or you can use Skype to talk.
So you could play on any server as long as you can communicate, preferably, verbally.
Of course, the problem with on-line chouettes is the ease of someone cheating, and that is essentially what broke up our fibs chou years ago, when it was proven that someone was using JF for their moves. So the chouettes I have now are only with friends and people I really trust, and we also exclude most of the world class players as I do not trust any of them to play poorly enough.
