I think that dropping a "take" against a weaker player might sometimes be correct, though I don't have a specific example on hand. In principle you could calculate an adjusted match-equity table to determine your take point. Standard tables assume that if you're (say) 3-away/3-away then you have a 50% chance of winning the match, but if in fact you have a 60% chance of winning then all the tables have to be adjusted.
In practice, though, my guess is that such situations are rare, and that for take/drop decisions, you are typically better off treating your opponent as a strong player. It's true that you do want to "require him/her to really beat you," but I think that usually means playing on, in order to give your opponent chances to make mistakes (as opposed to conceding a point for free without making your opponent work). It might have looked like your opponent had an easy time because he or she didn't leave shots, but in general there is plenty of scope for making mistakes when playing against a backgame.
