Could work, tweaking the dice will become useless and skilled rolling too. I would just do some minor changes:
1. Both players shake their cups as long as they (reasonably) want and then instead of throwing the dice, they just puth the cup upside down on their outer board (or right side). When both cups are standing on the board upside down, the cups are lifted, showing the dice (this may be not mandatory, you do it in your interest so that skilled rollers do not have any advantage).
2. Match the dices not according to the colour (tedious and dispute prone), but to the position: leftmost dice with leftmost dice. Just requires to lay the cup on the board "horizontally" (or close to). To facilitate this (and to reduce chances of cooked dice to almost zero) I would use dice cups with a middle separator, so that the cup volume is cut into two halves.
Pros:
- simultaneous rolling, for all practical purposes
- dice is virtually never cooked
Cons:
- How to handle clocks ? Maybe player B clock should not start when player A ends his move, but when player A, after having ended his move (clicking on the clock) puts the cup on the board and (before lifting it) he clicks again on the clock. This essentyally means that is player B shakes a lot more than player A, he's gonna end up eating his time as usual (or giving A extra time to think when A is on roll and B is shaking). Not sure current clock handle this feature: player A 1st click = stop player A time, player A 2nd click = start player B time.
- 2 set of dice in play, hence fast dice pick can happen: player B moves, clicks on the clock and picks up the dice quickly. Hard to contest an illegal play ... maybe payer A should acknowledge player B move clicking on the clock before B can pick up his dice, but this would be a hell of a procedure to put in place ...
- No dice actually rollin, I know some will complain :)
