What do bots do to adjust their play ATS?

The part that always confuses me is the estimate of gammons. If the bot says that White will win 25% gammons after giving the cube, I believe it is saying that is the percent of gammons if the game is played out to the end. But the game will not always be played out to the end as many times when Black takes the lead in the game he will redouble and White will drop. If you actually played the game out over the board, the end result would be far fewer gammons for White.

What am I missing (besides brains!) here. Doesn't that mean that you cannot trust the gammon estimate for White?
