I like best either the closest-to-e-gap rule (mentioned by Jason) or the even-easier mostly-perfect put-a-checker-on-the-5pt guideline (mentioned by Chuck).
Suppose you forget both of the above and decide to count. Unless you care about the total, you might find it faster to count the difference: the numbers that with each choice would have borne off only with the other play. Everything else washes.
In your example (6 5 2 with 32 to play), you can quickly see that the 6 2 position distinctly fails to bear off with 54 53 (4 numbers), while the 5 3 position distinctly fails with only 62 22 (3 numbers). The 5 3 position fails less and is therefore better (by 1 number).
It is a bit trickier when you have three choices; i.e., if you have 6 5 with 31 to play, you can reach 5 2, 4 3 or 6 1, so to be sure you would need to compare two pairs. But these tri-choices arise less often, and sometimes you can intuitively eliminate a candidate.
Like anything else, whatever method you gravitate towards, it helps to practice it a little.
