My initial impression upon seeing the board was that White was the computer player, because as you say, what human would stack all those White checkers like that? But apparently Blue was the computer player?

Yes, the human (with 37 years backgammon experience) stacked all those checkers.

Does NJ Backgammon have a manual dice option? That's what I think is the real solution. Or if you want a more interesting challenge, create an "easy" level in which the bot cheats to favor the player.

Yes, it does have a manual dice option. It also has an easy level. The easy level doesn't cheat, but it tries hard to let the player win. The hard part is getting someone who thinks they should be playing the hardest level to play a lower skill level. As they say, you can lead a horse to water, but you can't make it drink.
