Do we have any other tools for scrutinizing the dynamics of a match if it happens to be between a giant and a diminutive?

Modeling the diminutive with a computer is difficult, though perhaps not impossible. As far as I know, Zbot was the closest attempt at this and it is an incomplete project. For starters I think one needs a large database of diminutive games. Even then it's not so obvious how to model someone who understands the general strategic considerations you mentioned but does not have a very strong technical grasp of match equities, winning and losing chances, etc.

Furthermore once you have a good model of the diminutive then you also have the problem of modeling the giant, who may adjust his or her strategy to exploit the diminutive's known weaknesses. All very interesting, but unless there's some financial incentive to develop these models I don't expect to see them any time soon.
