Why say no to have your matches recorded?

I think I'm also paraphrasing Nack though he can speak for himself (but I doubt he reads this thread, he has indicated in the past that he doesn't always have time to read all the threads and sticks to the opening theory threads mainly) but he is for the recording of matches but only if the tournament and players involved in the match own the rights of the match. When he is on Gridgammon he is giving lessons, not playing matches, so when the table is private it's because he's doing a lesson.
There could be other reasons to not want your matches recorded, the main argument that I find valid is that the recording of the match will assure your opponent will play better. As I've said before, I've told Neil once before to shoo away from my match because I was playing a player who was playing horrific moves, just putting checkers wherever the hell his whim took him at that moment. All of a sudden NK walks up and he's playing a different game. He knows he's being watched, in his mind he's now accountable for his donkey plays, there will be a witness. That's essentially what recording a match does, the player doesn't want to look bad in the eyes of others or history and they're more likely to play straightforward what is best backgammon instead of anything they fancy.
