The dead cube rule only applies if the cube is at level where EITHER player will win the match with a single game win. If your opponent is holding a 2-cube at 7-1/9, (he has the 7), it is within the rules for him to redouble and you to take.
Ethical? I don't know. I might look at his score card and see what he wrote at the top for # of points. If he wrote 17 instead of 9 I'd let him off the hook.
Of course, you probably should have verbally agreed to the number of match points before you started.
"5.6 DEAD CUBE. When the cube level is high enough to ensure that the match will end with the current game, that game shall be played to conclusion at the present cube level."
This rule was created to void the situation, (for example), at 2-away, 2-away when someone tried to redouble to 4 and the opponent drops.
