Ok, let's try to analyze...
First, let's assume we play moneygame or lengthy match...race is about equal, you trail by 2 pips after your roll, your opponent is stuck behind 5-prime. He needs to roll a six to escape. Your obvious plan is to prevent him. So I see two options. either attacking plan 4-1(2)* 21-18(2) or escape play 21-18(2) 5-2 (i beleive 11-8 is weaker since we want to have attacker in the zone when he rolls 61,62,63.
Obviously attacking play is riskier, leading to more gammons but also to more single losses due to your blot on 21pt. Position of the cube is also important, but let's ignore it since we need to consider match situation at the score.
I am not sure which play is technically correct in moneygame situation, but i judge them to be close.
Now let's back to match score...What we know about the score. 3a-7a. we know gammon price is LOWER for us then in moneygame. So, if two plays are close in moneygame, i'm sure i'd play 21-18(3) 5-2 in this particular score, since value of my gammons is decreased in this situation. Ok, i'm not great technical player, but thats what i'd do
