I am a tournament backgammon player and agree that the doubling cube could be interestingly applied to other contests. There is some interesting math theory behind it as well that transcends backgammon and would apply to other contests that use it. A couple basic ideas are that you would need to be winning at least 1/4 of the games to make a take correct and that just having an advantage does not mean it is correcct to cube since retaining cube access has value.
You made a mistake in describing the rules though: "An hour later, he gets a long passing TD and quickly hits you again: "CUBE X 8." If you accept, it's suddenly an $80 matchup. If you accept AND beaver it, it's a $160 matchup. If you decline, the matchup is over and you're out $160. Gulp." You would only be out $80 losing the previous value of the cube.
Regarding the 10 minutes being allowed: You doubled on your advantage at the current time but he gets to wait and see how it goes before deciding. It would be like a backgammon player getting to see the next few rolls and then being able to decide. This could be viewed either as a flaw in the rules or an interesting quirk to be accounted for.
I get the impression there are a lot of beavers when you and your friend play. It indicates at least one of you is playing poorly. Also I will guess your nobody should play you for money quote is possibly off base. There is a big difference between beating your friends and beating a top serious player.
