Non-precision dice vary quite a lot, so you could test one set and get a result saying they were fair, but someone else could get statsig results showing that more 6s than 1s appeared, and nobody did their tests or results analysis incorrectly.
And that is part of the answer--we need dice that are fair, but we don't want to waste a lot of time demonstrating that each particular set of cheap dice we got with a new board are fair. Hence the desirability of dice that are more or less standard.
Another problem with the cheap dice is that someone can more easily mess with them, especially if they are opaque. I'm sure it's not that hard to add a bit of lead or something else non-magnetic but with a higher specific gravity than the material used to make the dice themselves, just below the spots on one face, in order to make the opposite one come up more often. It wouldn't be all that easy to detect in a single match that you play using them, but you would be at quite a disadvantage against the person who knows they have been altered and what their bias is, no matter what it is.
