If we were playing individual cubes, and they all have doubled me, I would pick out the player most likely to pass, and double her.

If we were playing one cube only, I would roll against 3 or more players. Against 2 players, I'd guess. Redoubling 5 or more players all at once seems obviously foolish to me, as a money management idea.
