Giant versus average open player

My view would be that if two perfect players meet, the result should be explained to difference in luck, because nothing can be attributed to the skill difference.
I understand that you could say that skill influences the result, in the sense that if one of the perfect players would not play perfectly, the result would be different, but that seems to negate the premise of the question.
In the case of go, I believe that with perfect play, always either black of white will win (I am not sure whether there is a handicap for opening and whether the handicap is sufficient to overcome the benefit from moving first); in the case of chess, you'd get an endless string of draws. In both cases, you could say the result is determined 100% by luck - whether or not you win the toss for the opening move.
