Maybe I'm missing something here (had a couple of drinks and dinner is late), but if the defense on a two point conversion interferes at will, the offense either converts, refusing the penalty, or gets another shot at it.

Aren't there circumstances where, if the defense commits a penalty on a successful PAT, the PAT counts and the penalty is assessed on the ensuing kickoff? Really not sure, but would be curious to know the answer.
