If we slot, we want to cover, making a point. That is the reason. So we grab a chekker, nailing down the 5 point. But as real life, backgammon is a game of excemptions. We are behind in the race, three men vs. one man in the rear. White with his good structure is on verge to make a point in the offense or to flyout the last straggler. Even if we make the 5 point, this will not prevent anything in this prospect.
One man can not anchor. Priming him is more difficult, because one joker and he is away. So what about hitting the blot with making a point? Then the white blot will stay under influence in our next turn. If white throws not a double, he can't improve. Sometimes he gives us even a second blot to attack. If we are hit, it is not the end of the world. We are in good shape to build an advanced anchor. Making the 5 point is a slumper play, easy to make over the board. But 8/3* 6/3 is more efficient. It must be the winner.
