The reason is that one checker primed is simply death unless somehow you can force your opp to break his prime and even then he can often break it by attacking that lone checker.
One checker cannot form and anchor vs the prime and almost certainly that prime will walk home for a closeout and sometimes a gammon.
Two checkers can form an anchor against a prime and sometimes that prime will break awkwardly. Also, you're much more likely to hit a slot later on from a primed anchor than with a closed out checker. But, two checkers if they are attacked and closed out normally leads to a gammon loss.
I think the reasons for this silly adage (I think that is the proper term) is that one checker can often sneak away from a priming attempt, whereas two checkers have a considerably more difficult time escaping from an anchor.
However, as here, "attack one, prime two" is very often missaplied.
