I think the term you're looking for is "banana split."

In the vast majority of the cases that I see this kind of play, blue hits so as to prevent white from achieving a very critical goal (e.g. hitting blue and making the 6th point in a row) or because any other play may ruin blue's game plan/position/assets.

I'd recommend going back to the fundamentals here. Your goal, whether ahead or behind, is to make the play that gains the most compared to what it risks. You shouldn't be thinking, "I'm ahead so I should just cling safely to my lead." At every turn, you should be trying to squeeze the most out of the position. Whether you're ahead or behind, if you have big boardage, then the risk of leaving blots is minimal, so it doesn't take much potential gain to make it worth the risk. You'd rather close out two or more checkers, not just one. You didn't roll a ace to pick up the second checker, so the hit gives you the tempo you need for another chance.

That's why I say the hit isn't against the flow of the game. Your opponent's position is very weak so your killer instinct should be on red alert. Hitting should be the first thing on your mind (even if further consideration causes you to turn down the hit).
