In XG, at the bottom left (or right, depending on what side your move log and analysis panel are on) are three radio buttons. Chose "Initial", to see the dice roll, and the position prior any plays being made.

To my knowledge, it is not possible to display the dice roll and position while hiding the play choices, like Snowie's Matchquiz format.
