I've been using the "ChessClock" app by TriLeet a few times.
That one works like a charm, and also pauses by sliding across the middle of the clock. No way you ever pause that clock unintentionally, you can safely go with th e sliding to pause solution. It's also a standard method for the iPhone, so it will be intuitively to operate for the users.
The ChessClock app uses optional standard delay by the way, and you can also optionally choose "accumulate" (which gives you the delay version of Fischer time). It doesn't have support for "true" Bronstein and Fischer, where the time is added AFTER you complete your move.
However, all this debating of Bronstein versus Delay, confused players, etc. are totally exaggerated. Every player that are capable of playing backgammon at intermediate tournament level, will also be capable of understanding a clock that adds the time when you end your turn, instead of delaying the time in the start of your turn, it's not exactly rocket science. And the difference is a mere 12 seconds over the course of a full match - a time you can easily adjust in the beginning, if you want to. The most important thing is that both players agree on the time to begin with, and knows what kind of clock they're using (it should be very obvious, but to avoid any incidents make sure of this to begin with just like you always loudly announce the score between games, etc.).
Rich and others that claim no-one understands, knows or uses Bronstein time in backgammon - that's not correct. We have yet to see the first true backgammon clock, so until then we are stuck on the good old chess timers, and many of these implement correct Bronstein time. I've seen at least 3 different makes used in tournament play here in Denmark, which use Bronstein, including my own Garde Digital clock. And I have a feeling, that as long as we are using chess-clocks, we'll see true Bronstein time implemented on them - especially on the "better" clocks, since they will more likely try to implement the correct timing schemes for chess!
