Neil will any speed be gained for XG2 using memory speed 2000 rather than 1600?
No, you will not see the difference. Recent CPU have such a huge L3 cache that memory access is very limited. I've optimized cache usage about 2 year ago (before v1 release) at the time i had only a core2 duo, so everything more recent than that will have almost no need to hit the physical memory.
As far of OC, the 2600K seems to be a beast. There are multiple report that it can be OC at 4.5GHz on air using stock cooler! and apparently 5GHz has been achieved.
It seems there is no reason to buy the 2600 as the 2600K is only a few buck more. even if you are not OCing now, you may in the future
Btw, On Intel Road map the octo-core Sandy bridge is planned for Q3 2011. It will require a different motherboard apparently: socket 2011(?).
