I think that's the point you're missing.
The majority of the EV from such golf bets, comes from being good at fixing a non-fair handicap that the other side considers fair.
I don't know what kind of pros they were playing, but I bet you that there were pros out there at the time, who wouldn't choke. But they were probably vastly outnumbered by all the journeymen pros/teachers sitting hanging out in the clubhouses looking mighty sharp.
Players like Lee Trevino, Ray Floyd, etc, all had a style that didn't show their level but scored fantastic. They were playing a lot of private moneygame matches before they won their first PGA tournaments and got too well known. Floyd was considered the expert in scoring when his game was off (the strongest aspect of his game was probably short approach shots and long puts), and Trevino had been playing all sorts of crazy props as a kid, including playing rounds with no golf clubs (using shovels, and stuff like that instead).
I think, apart from negotiating a favorable handicap, the ability to being able to win all sorts of different prop bets (knowing your really strong sides), bet/player selection, and of course keeping your head cool, are the most important things, if you are to make money on the golf course in non-tournament play.
I recall some annecdotes on these players golf hustling in particular, don't know if they are online - I'll give it a shot with google later on :-)
