I believe the main improvement you can make to the side-by-side display option is to move all the information in the central column to the caption lines above and below the board. For example,

Forgive my incomplete graphics, but please mentally replace "x" and "y" with White and Black checker icons.

IMO, the words "points" or "point match," and "pips" are extraneous, though you could probably squeeze them in if you like. If instead/also you got rid of the "to play 21" (after all, the dice on the board show the roll), you could move the White and Black checker icons to the left of "Player 1" and "Player 2."

I would greatly prefer this method of displaying the score and pip information even for the regular (vertical) display!
