62S-32S-51@-61 (Chuck's original) I would Hit, because it would be great to gain a race lead and put a man behind my forward chequers.
In 21S-32S-21@-61 (Nack's top-right position) it looks better to make the five point. White already has two in your home board and is 8 pips worse in the race, so knocking another man back loses importance. Making Blue's 5 point is better then in the first position because the new point is in front of White's defensive anchor rather than behind it. Therefore, it is immediately effective rather than only potentially useful should Blue hit.
Another consideration is that in the first position, Blue's chequer on the 11 point is subject to direct shots, whereas in the second position White has only indirect shots. Making the five point in position 1 safeties that blot, which makes the hit less attractive, but this is mitigated somewhat in that hitting converts those shots to indirects, and it costs White the anchor to hit. I don't think this consideration is enough to make pointing correct.
For the bottom diagrams, I think 62S-32Z-31POINT is correct, but 62S-32$-31HIT is better. The principal differences I see are White's improved chances to make an advanced anchor after 32Z on the second roll (making it more important to block up an anchoring spot), and improved chances to make an inner board point after 32$ on second roll (making it more important to remove the builder).
