Measure of (much more) skill?

but if you played, say, 2 out of 3 matches to 5 or 7, I think that would require much more skill than one match to 11 or 15

Can you throw some numbers for us to see what you mean by "much more skill"?

For example, if difference between players is (a) 100 Elo points, or (b) 200 Elo points, how big edge does better player have in:
(I) 2 out of 3 5pt format,
(II) 2 out of 3 7pt format,
(III) 11pt match,
(IV) 15pt match?
