I'm not sure what you mean by "arguing with the definition." By definition, the EPC measures the average number of rolls needed to bear off, but that's not the definition of a take/pass decision. So, while EPC is very accurate in most circumstances (if you can calculate it, which is only approximately possible in the majority of cases), it's not always correct, and I wouldn't call it the "Holy Grail."
