Make sure when you're setting up variations that you aren't affecting other aspects of the position. For example, in your 5 off v. 4 off example, when you turned to 4 off you gave the opponent a much better 21 from the bar than he had in the previous example since he was totally stripped. This has to have some sort of an effect.
There is also no reason to skimp on the rollout settings when the rollout takes 10 seconds.
