If you change the score to be actually GG (i.e., 2a1a Crawford) then I think you'll see that there is a dramatic difference between GG and 2a5a with a centered cube.
A crucial difference between GG and 2a5a is that at GG it doesn't matter if you lose a gammon, whereas at 2a5a your opponent profits greatly from getting a gammonish position and then sending you the cube, which kills your gammons. If you hit twice here, then the variations where things go well for your opponent are very costly for you. Remember that you can also win the match in this game by creeping up on an efficient cube and cashing, or winning a single after D/T. If you're close to an efficient cube then you should think twice about risking the cube turn on the chance of an undoubled gammon.
