The Masters is a single elimination 16-player bracket with 9-point matches.
The 2nd tournament (they call it the Open) is a 32-player bracket. If you win your 1st match you continue on in the Main if you lose your 1st match you go to the consolation. After your 1st match it is a knock out the rest of the way. If you don't get a bye to the round of 16 you will play 2 5-point matches and then 7-points the rest of the way in the main. If you and your 1st opponent both get byes you will play 7-point matches all the way in the main. All consolation matches are 5-points.
Clocks are rarely if ever used. I will sometimes bring a clock and will suggest that we play with one. You cannot force a clock in any of our club tournaments. Most non-open level players do not want to use it but most open players don't mind. I have suggested many times to a 1st time clock user that we play with one set of dice and the time control would not matter (they can't lose on time) or with the clock off, just so they could get a feel for what it is like to play with a clock. Many have accepted this a few have declined.
There are a few slow players but it is really not much of a problem in the club.
