I don't believe it matters if it had been posted on the draw sheet. In my opinion, where there is a question of what is fair or not, the ruling should tend to go AGAINST the party that initiated action that caused the problem or question, whether said initiation was intentional or not. In this case, it was the director who decided to change the score and he should have been extremely careful to see that the opponent understood. Further, between games, he should have checked both his and his opponent's score card and clearly stated that the score is "3 to 2 my favor in this match to 5" to again make sure the opponent was aware of the change.
Now, let's say that the tournament director decided to change the length of the match, told one of the players, and asked that player to be sure to inform his opponent. And then the same dispute occurs. Again, I would rule against the player that was charged with the responsibility to inform his opponent. (Of course the TD should have informed both players to begin with.)
I find this approach to settling disputes generally the most fair approach, and I believe it should be a part of the guidelines for tournament directors to rule in this fashion in most disputes (unless there are clearly reasons to rule otherwise).
