I agree with Steve that pre-pairings for the first two or three rounds is acceptable. But I'm not sure how much time it shaves from the schedule. It shouldn't take more than a few minutes to do between-round pairings in a low-attendance tournament like the Vietor Cup.

I explained how I directed the Danish Mixed Doubles, with manual pairings for each round, and accounting for unfinished matches, here in Sept. 2009:
