There are several components which make baseball more natural to analyze than US football (and world-football and basketball and hockey):

1) stop action (which you mention), in common with US football,

2) one player vs. one player dominant (which you also mention) since pitcher vs. batter is, from what I've read, > 75% (probably >>).

3) very long season (10 times US football) meaning easier to amass numbers based on consistent lineups.

4) TONS of data available, especially today with computer analyzed pitch location, etc.

5) players not as prone to injury, at least compared to US football (don't know about WRT other action sports).

6) NO CLOCK! Game can go on forever, sort of like backgammon matches. :) No lead is ever safe. This somewhat simplifies situational decision making, but certainly doesn't come close to eliminating it.
