Personally I think you acted correct. My reaction depends on
- how fast it was (if it was a fraction of a second I wouldn't care)
- was I still thinking or picking up the dice
- how friendly the relation to the opponents is
- the stake

Independent of my opinion: you made clear that you don't accept fast rolling, it is in accordance to the rules, so everything was o.k. And what if your opponent picks up his unfavorable roll with: Oh, you wasn't ready ;) There is always the doubt that fast rolling was done to exploit an unfair advantage, so one can't complain if the roll has to be picked up etc. Therefore I carefully look not to fast roll, even in friendly low stakes games...
